The Old Ways, Worth Keeping
A Tradition Shared Across Centuries
Long before broth became a modern wellness ritual, it was a cornerstone of kitchens around the world.
From the rich stocks of classical French cuisine and the nourishing broths of Eastern Europe to Chinese master stocks and the delicate umami of Japanese dashi, generations have relied on the simple transformation of water, bones, vegetables, and time.
Recipes differed. The principles endured: extract flavor carefully, use ingredients fully, and waste little.
At ON THE LAM, we continue this tradition in our own Idaho kitchen.
The ON THE LAM Difference
The bones. The extraction. The patience.
We begin with carefully sourced bones, chosen for their character, connective tissue, and flavor. Our broths are gently simmered over extended periods, allowing their natural gelatin and savory depth to develop without relying on artificial thickeners.
Some are roasted. Others are infused with herbs, woodland mushrooms, roots, and botanicals. Each is prepared according to its own recipe, never a single base disguised with different seasonings.
We produce in limited batches, paying careful attention to extraction, reduction, flavor, and consistency.
Our broths are frozen for distribution, rather than processed for shelf-stable storage.
The difference is in the first sip.

Culinary Excellence & Functional Nourishment
Culinary Excellence
A proper broth is among the most useful preparations in a kitchen.
Sip it warm, or use it as the foundation of soups, stews, braises, sauces, and grains. Replace cooking water with broth to bring greater savory depth to rice, legumes, or vegetables.
A concentrated broth can enrich a pan sauce, deepen a ragù, or become the foundation of a carefully prepared reduction.
Good cooking begins with good foundations.
Functional Nourishment
Beyond its culinary purpose, bone broth provides a warm, savory way to incorporate protein and gelatin-derived amino acids into the daily diet.
The nutritional character of each preparation differs according to the bones, extraction, reduction, and botanical ingredients used.
Some are naturally rich and gelatinous. Others are lighter, herbaceous, or entirely plant-based.
Choose what suits your palate, your cooking, and your nutritional preferences.
Simple ingredients. Thoughtful preparation. A place at the everyday table.
