OUR QUALITY STANDARD
To preserve the integrity of our foods, our broths are shipped frozen.
This decision protects the natural structure created through slow simmering and careful preparation.
Traditional canning requires extended heat processing. While shelf-stable products have their place, that process alters the delicate structure of slow-simmered broth. Freezing allows us to deliver the broth much closer to the way it leaves our kitchen.

OUR PROCESS STANDARD
Every product from On the Lam – Mini Ranch & Gardens follows the same disciplined approach.
• Soft simmered using marrow and knuckle bones, and collagen-rich tendons
• Cooked at controlled temperatures, never rushed
• Skimmed, strained, and finished by hand
• Produced in limited batches
• Adjusted by sight, taste, and texture

LIMITED BATCH PRODUCTION
On the Lam is intentionally produced in limited batches.
Small production allows us to maintain the preparation standards required for slow-crafted foods.
We release products as they are produced rather than scaling beyond the limits of the process.
Because of this:
• Inventory is limited
• Batches sell through quickly
• Availability follows production cycles

MATERIALS & RESPONSIBILITY
We choose materials that protect both the food and the process.
Glass remains our preferred vessel, but frozen distribution requires containers that can safely withstand expansion during freezing and transport.
For this reason we use food-safe polypropylene (PP) containers. PP is widely used in professional food applications because it is stable, durable, and designed to protect food integrity.
Our insulated shipments use responsibly selected materials wherever possible, including natural wool insulation and recyclable protective liners.
As we grow, we continue refining these systems to reduce waste while preserving quality.
